What is Gluten?

Gluten is a type of protein most popularly contained in wheat but also found in barley and rye products.

Many people suffer from gluten sensitivity which is difficulty digesting it. This is a form of celiac disease and can cause a lot of discomfort. It can be misdiagnosed many times as IBS (irritable bowel syndrome) or acid reflux disease.

1-3% of the population are actually gluten intolerant, meaning they cannot digest it, but it can also cause leaky gut syndrome in normal individuals.

Why is Gluten-free on the Rise?

Gluten has been linked to leaky gut syndrome. Leaky gut syndrome can lead to a host of other health issues because of the intestinal wall is breached. According to Web MD, common symptoms of leaky gut syndrome include gas, bloating, cramping and general pain in the intestinal area.

In the last 50 years, celiac disease has increased four-fold. The explosion of celiac disease happened to coincide with the "invention" of new varieties of wheat. To increase the harvest, wheat was genetically modified (see GMO). Now, common forms of wheat found in the grocery store have much more gluten than the grains of the past.

Also, the processes used to grow and harvest the wheat are a problem. The same pesticide used in the product Round-Up (a weed killer) is commonly used to dry out wheat so that it is dry enough for processing. Varieties of sulfur and nitrogen used in fertilizers have also been found to alter the genes of the wheat. Some resarchers have found genetically modified food can cause cancer by interrupting the natural hormonal processes of the body.

Chemicals used in baking like sodium bromide also contribute to general intestinal distress.

What are Some Healthy Alternatives to Conventional Wheat?

The most obvious thing you can do to guard your health is stop consuming barley, rye and wheat. You can also explore sourdough options which have been found to lower gluten content.

Buy organic for your health and for the health of the environment and generations to come. And, while you are shopping for organic options, you might want to look up the more ancient forms of wheat and other ancient grains.

Einkorn is the most ancient form of wheat, having the lowest amount of gluten. And, durum and emmer are the next best options. Einkorn may be difficult to locate in regular grocery stores, but most grocery stores have durum, and emmer is available at natural food stores.

I have compiled a list of some ancient grains for easy reference:

• spelt
• quinoa
• kamut
• emmer/farro
• khorasan/kamut
• chia
• teff
• amaranth

Research ancient grains for yourself. You will find that they are more nutritious in addition to being easier on the digestive tract, some boasting high magnesium and healthy fat content.
